The "Bio" Pinot Noir flourishes on organically-farmed terroir, on the best slopes of Ammerschwihr with predominantly clay-limestone soil. It is certified by Ecocert FR-BIO-01. 

Vinification of Pinot Noir Organic "Les Caves de l'Enfer"

When the grapes are harvested, we sort each batch before starting the skin maceration process. This maceration of the berries with the juice extracts the colour, and is carried out under temperature control with pumping over and punching down of the cap for almost a week.
